Every year someone messages me: “Christine, which words do I capitalise in Merry Christmas and a Happy New Year?”

This looks clean and traditional.
Inside a normal sentence, you can go lowercase with merry and happy:
We wish you a merry Christmas and a happy New Year.
Both versions are correct.
